Full Description

Eastern redbud is a shrub or small tree that grows in Eastern United States. It is used in the landscaping industry because of its many pink flowers produced in early spring. Eastern redbuds have heart-shaped leaves with smooth margins. The flowers are pink and edible. The flowers produce bean pods.
Edible Parts: The flowers are edible raw and can be used as a salad garnish. The young meristematic leaves are edible, although when chewed raw they have the texture of dirt.
